Citrus & Sunshine Cookie Bites

Lovely and lemony, these darling little cookies melt in your mouth like butter on a hot summer day. (And speaking of butter, do not worry one bit about how much butter is in this recipe. Butter is a natural substance. Butter is the color of sunshine. Butter provides nutrients. Butter is bliss.)

 

Cookie Ingredients:

1 cup butter, softened 

⅓ cup powdered sugar

⅔ cup cornstarch

1 cup flour

 

Cookie Directions:

  1. Preheat oven to 325 degrees. 
  2. Cream butter and sugar until it’s as light as a summer breeze.
  3. Whisk together the cornstarch and flour, then add  butter mixture and blend thoroughly. 
  4. Drop by teaspoonfuls onto ungreased cookie sheet and bake for 15-20 minutes. 
  5. Cool, then frost.

 

Frosting Ingredients:

4 tbsp. butter, softened

2 cups powdered sugar

2 tbsp. fresh lemon juice

Lemon zest to taste 

 

Frosting Directions:

Cream the butter. Beat in the sugar alternately with the lemon juice (“Squeeze the day!”) and zest (“You’re the zest!”), beginning and ending with the sugar. Spread frosting on cookies.
