Lovely and lemony, these darling little cookies melt in your mouth like butter on a hot summer day. (And speaking of butter, do not worry one bit about how much butter is in this recipe. Butter is a natural substance. Butter is the color of sunshine. Butter provides nutrients. Butter is bliss.)
1 cup butter, softened
⅓ cup powdered sugar
⅔ cup cornstarch
1 cup flour
- Preheat oven to 325 degrees.
- Cream butter and sugar until it’s as light as a summer breeze.
- Whisk together the cornstarch and flour, then add butter mixture and blend thoroughly.
- Drop by teaspoonfuls onto ungreased cookie sheet and bake for 15-20 minutes.
- Cool, then frost.
4 tbsp. butter, softened
2 cups powdered sugar
2 tbsp. fresh lemon juice
Lemon zest to taste
Cream the butter. Beat in the sugar alternately with the lemon juice (“Squeeze the day!”) and zest (“You’re the zest!”), beginning and ending with the sugar. Spread frosting on cookies.
