RV There Yet? Ice Cream Sandwiches


 

Robert’s mom makes these cool and tasty treats when they go camping in their trailer--a fun tradition in their family! So please enjoy Robert’s mom’s special recipe, named for Kimberbell’s popular RV There Yet? Tea Towel from Buttons: Always in Season!

Preheat oven to 375 degrees

Ingredients

2 1/4 cups flour
1 tsp baking soda
1 tsp salt
1 cup (2 sticks) of butter, softened
3/4 cup sugar
3/4 cup brown sugar
1 tsp vanilla
2 large eggs
1 cup semi-sweet chocolate morsels

Directions

  • Combine flour, baking soda and salt in a separate bowl and whisk together. Beat butter, sugar, brown sugar and vanilla in a large bowl until creamy.
  • Add eggs to sugar mixture and beat. Mix in flour mixture, then stir in morsels. Drop rounded tablespoons onto an ungreased baking sheet.
  • Bake for 9 to 11 minutes and cool on the baking rack. When cooled, place a scoop of vanilla ice cream (or flavor of your choice) between 2 cookies and wrap with plastic wrap.
  • Store RV There Yet? Ice Cream Sandwiches in your freezer and enjoy on your next camping trip or at any outdoor summer gathering!
