Robert’s mom makes these cool and tasty treats when they go camping in their trailer–a fun tradition in their family! So please enjoy Robert’s mom’s special recipe, named for Kimberbell’s popular RV There Yet? Tea Towel from Buttons: Always in Season!
Preheat oven to 375 degrees
2 1/4 cups flour
1 tsp baking soda
1 tsp salt
1 cup (2 sticks) of butter, softened
3/4 cup sugar
3/4 cup brown sugar
1 tsp vanilla
2 large eggs
1 cup semi-sweet chocolate morsels
- Combine flour, baking soda and salt in a separate bowl and whisk together. Beat butter, sugar, brown sugar and vanilla in a large bowl until creamy.
- Add eggs to sugar mixture and beat. Mix in flour mixture, then stir in morsels. Drop rounded tablespoons onto an ungreased baking sheet.
- Bake for 9 to 11 minutes and cool on the baking rack. When cooled, place a scoop of vanilla ice cream (or flavor of your choice) between 2 cookies and wrap with plastic wrap.
- Store RV There Yet? Ice Cream Sandwiches in your freezer and enjoy on your next camping trip or at any outdoor summer gathering!
