This creamy soup base is delicious for your favorite veggies, including cauliflower, broccoli, carrots, celery, potatoes, and more! (You can even add a little bacon or ham.) 🙂
Cream of Comfort Soup
4 Tbsp. butter
1/2 cup flour
2 cups Half & Half (or canned milk)
3 oz. cream cheese
4 cups milk
1 1/2 tsp. salt
1 tsp. pepper
Grated cheese (optional)
Whatever veggies you’d like!
- In a heavy saucepan, melt butter and stir in flour until roux forms.
- Add Half & Half, cream cheese, and milk (do not boil). Whisk until well blended.
- Cook whatever vegetables you’ve chosen (sometimes I just use a California mix of carrots, cauliflower, and broccoli) and then combine with the sauce.
- Salt and pepper to taste and garnish with grated cheese.
