Heart-Felt Friends & Coconut Cozy Bread

Coconut Cozy Bread

Ingredients

4 eggs
2 cups sugar
1 cup oil
3 cups flour
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. baking powder
1 cup buttermilk
2 Tbsp. coconut extract
1 cup sweetened, shredded coconut

Directions

Mix eggs, sugar, oil, and coconut extract, then alternate adding dry ingredients with buttermilk. Add shredded coconut. Mix. Pour into two large loaf pans OR three small loaf pans (grease well beforehand). Bake at 350 degrees for 80 minutes (large loaves) or 45 minutes (small loaves). After removing pans from oven and while still hot, pour glaze over each loaf.

Glaze

1 cup sugar
1/2 cup water
4 Tbsp. butter

Boil for 5 minutes and pour over hot loaves. Cool for 45 minutes before removing Coconut Cozy Bread from pans.
